Herb Butter (Enough for up to 12 ears of corn)
1 stick Unsalted butter, softened
2 TB Herb Paste OR you can substitute 2TB of freshly minced herbs of your choice
Salt and Pepper to taste (optional)
Mix ingredients together. Chill any remaining butter and use on grilled or baked fish, vegetables, steaks, etc.
For the corn, simply remove the outer layers of husk until you get down to one or two layers covering the corn. Gently peel these away to get to the corn silk and remove it. Cover the corn back up with the remaining husks and place them on a hot grill. Turn them every minute or two for even heating. Don't worry if the husks get black, but don't allow them to light on fire. On a medium-high grill, they will take about 8 minutes to cook. When done, peel away husks and slather with Herb Butter. A simple summer treat!
