Light Balsamic Vinaigrette

Makes about 2 cups

3 Garlic Cloves, minced
3 TB Dijon Mustard
1 1/3c Balsamic Vinegar
2/3c Hot Water
1 1/2 TB Sugar
2 TB Fresh Thyme or 2 tsp Dried Thyme
3 TB Olive Oil
Salt and Pepper to taste

In a blender, combine garlic, mustard, balsamic vinegar, hot water, sugar and thyme. With motor running, slowly add olive oil until completely emulsified. Season with salt and pepper to taste.
